Cooking a cake in a pan (on the stovetop) is easy and perfect if you don’t have an oven. Here’s a simple method you can follow:

Ingredients:
1 cup of flour (all-purpose)
1/2 cup of sugar
1/2 tsp baking powder
1/4 tsp baking soda
A pinch of salt
1/4 cup of melted butter or oil
1/2 cup of milk
1 tsp vanilla extract
1 egg (optional)
1/4 cup of yogurt or sour cream (optional, for extra fluffiness)
Equipment:
A heavy-bottomed pan with a lid (preferably non-stick)
A steam rack or trivet (to elevate the cake tin from the pan)
Instructions:
Prepare the pan: Grease the bottom and sides of your cake pan with butter or oil. If you're worried about sticking, you can also dust the pan lightly with flour.

Mix the dry ingredients: In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix them together to ensure everything is evenly distributed.

Add the wet ingredients:

In another bowl, whisk together the melted butter (or oil), milk, vanilla extract, and egg (if using). Add the yogurt or sour cream, if desired.
Gradually add the wet ingredients into the dry ingredients and mix until the batter is smooth and lump-free. Don't overmix to avoid a dense cake.
Prepare the pan for steaming:

Add a few inches of water to the bottom of your large pan (the water should not touch the cake pan). Place a steam rack or trivet inside the large pan to elevate the cake pan above the water.
Pour the batter into the cake pan: Once the batter is ready, pour it into your prepared cake pan.

Cook on low heat:

Place the cake pan on the trivet in the large pan. Cover the large pan with a tight-fitting lid to trap the steam.
Cook the cake on low heat for 30-40 minutes, checking every 10 minutes. You can check the doneness by inserting a toothpick into the center; it should come out clean when the cake is fully baked.
Cool the cake: Once the cake is done, remove it from the pan and let it cool on a rack or plate for a few minutes before serving.

Tips:
Temperature Control: Cook the cake on very low heat to avoid burning the bottom. You want the cake to steam gently.
Lid: Make sure the lid fits well so the steam stays inside the pan.
Add flavor: You can add chocolate chips, fruit, or nuts to the batter for extra flavor.
